Just made an amazing refreshing colourful summer s Just made an amazing refreshing colourful summer salad, with my Sicilian twist of course. It’s bursting with flavour. You have the sweet and savory. So healthy and yummy. Recipe.⬇️

Summer Beet Salad 

2 large boiled or roasted beets cut into wedges or circles
1/4 cup red onions cut into very thin slithers or wedges 
1 large blood orange peeled and cut into pieces 
1/4 cup feta or goat cheese crumbled 
1/3-1/2 cup fennel cut in very thin wedges, add leaves on top 
Dressing:
Juice of half an orange 
1/4 cup extra virgin olive oil 
Salt/pepper to taste 
Oregano (optional)

Buona Domenica.❤️Here are my Ricotta Stuffed Shell Buona Domenica.❤️Here are my Ricotta Stuffed Shells.👩‍🍳You can make half the recipe using only 1 Ricotta, 1 egg and use only 20 shells and this way you’ll be able to fill your shells right to the top bc you’ll have a bit extra ricotta filling. Make a plain Marinara  Sauce using Passata Sauce and if you want to cover your shells with sauce you can. I decided to just dunk mine in the sauce instead. I will write my recipe in the caption below. I used 3 jars of sauce (1 liter each). You should be ok with just 1 1/2 liters for 20 shells. If you have extra you can just add it on your shells after they’re cooked. They’re so delicious and the perfect amount of cheese.👌Feel free to add more or less cheese. Mine were perfect for me.😋Enjoy another one of our family favourites that we have been making for generations!!👩‍🍳🇮🇹

Bb’q Orata (also known as Sea Bream in English), Bb’q Orata (also known as 
Sea Bream in English), and Shrimp on skewers. 
My husband bbq’s them and we also did shrimp as well. 
Bbq Orata on high heat 10 mins on each side. Add salt/pepper. Once it’s ready, open the fish remove the head, the scale and add salt, pepper, freshly squeezed lemon, drizzle a bit of olive oil if you like. Each person gets their own individual fish. 
Note-make sure wherever you buy it they also clean the inside for you. They know what to do.👌👩‍🍳👨‍🍳
Shrimp:
De-vein shrimp and add them to a bowl with 1/4 cup olive oil, salt pepper, freshly squeezed lemon juice, freshly chopped parsley. Marinate them in the  fridge for 20-30 mins. Now add them to metal screwers and bbq for 2 mins on each side, until they turn orange in colour. Do not over cook them. Remove and enjoy. 👌😋👩‍🍳
FYI- When making Orata, make sure to also put parchment paper then foil. I always use parchment in all my videos bc I don’t like the foil touching my food. But this time my husband forgot and I was busy doing 10 other things as you can see here. 
I made my focaccia, rapini with spicy anchovies/olives (I have a video on these). Also cheese with my homemade olives, fresh oysters, heirloom tomatoes with fior di latte mozzarella and fresh basil from my garden. What A feast.🙏😋👩‍🍳

So delicious and so easy! Restaurant style! This amazing dish only took me 25 mins and dinner was on the table. This original dish from Naples only had 3 ingredients…Garlic, oil and tomatoes just like Pizza alla Marinara and this is where its name came from. But the Sicilians also made this dish their own along with the Pugliese. Sicilians added their very own black olives and Pugliese added their capers of course.👌So to honour both mine and my husbands family I decided to do a mix of Sicilia E Puglia.👩‍🍳👨‍🍳
Yesterday I had a craving for some meat so I went to visit my friends at Centro Quality Meat and of course they took good care of me and gave me some amazing veal Fettine….Only the best for his clients. Grazie Martin and Silvio. @centromeats 
I decided to make the Sicilian and Pugliese version of our very own dish that was also made in Napoli with only 3 ingredients….Garlic, oil and sauce. Guys you can’t mess this up even if you tried. You have a dinner party with very little time to prep then this is your dish for your guests. Make sure you have some fresh bread bc I forgot to buy some, boil a fresh bunch of broccolini with drizzled olive oil, you can make some roasted potatoes, a salad and you’re done.👌😋👩‍🍳Oooh one last thing….Some good Amarone Wine ! 🍷But hopefully your guests will bring that.🙏😜Cheers!🍷🍇🥳

Lentil Soup.❤️🇮🇹👩‍🍳This dish reminds me of my chil Lentil Soup.❤️🇮🇹👩‍🍳This dish reminds me of my childhood. It’s home, it’s comfort, it’s one of the most iconic authentic Nonna dishes. Nonna use to make this dish for me on repeat. We ate it as a soup more liquidy, or a bit thicker with pasta (d’adini), rice or on its own. It’s quick, inexpensive &  a no brainer. I’ve made many videos of this dish on my page bc that’s how much I love it.❤️Lentil is a great source of iron, which I’ve always been low on. I love the fact that you don’t have to soak them overnight. Just lay them flat on a dish & go through them to make sure there aren’t any tiny little stones. You may find 1 or 2, just remove them & give the lentil a quick rinse. Since it’s such a healthy dish, I usually make lentil all year round. I made sure to introduce this to my children at a very young age, just like Nonna did for me. This recipe was actually my mother in laws. When I was a teenager, she taught me how to make it her way. She never sautéd her veggies. She just added them raw right into her pot of water. I usually do it that way too. But sometimes I like to change things up. People ask me, but where are the onions?? One rule Nonna Lucrezia had was…..Absolutely No Onions go into her lentil!!!🤷‍♀️Only whole garlic cloves. If the garlic was huge then you cut it in half. 
Recipe⬇️

Lentil Soup 

Ingredients
 
3 tablespoons extra virgin olive oil 
2 carrots chopped
2 celery stalks with the soft leaves 
3 garlic cloves
3 romano tomatoes chopped(frozen from my garden)
Handful of thinly chopped parsley
3 bay leaves
1 tablespoon organic soft veggie bouillon
salt, pepper 
400g dry lentil (2 cups), approx 3 liters of water. 

Method

In a large pot add olive, veggies, garlic and chopped tomatoes. 
Add water, lentil, bouliion, bay leaves, salt, pepper, and parsley. 
Cook on medium/low with the lid slightly open for 45mins to 1 hr. Stir occasionally. Cooked basmati rice separately. Before serving, drizzle some very good extra virgin olive oil on top & freshly ground cracked pepper. You can also use pasta ditale, or spaghetti cut up.

Questi spaghetti sono veramente Buonissimi.👌😋👩‍🍳🇮🇹This is such an amazing simple, quick and easy pasta that comes together in no time. I think this has to be my top 5 favourite pasta dishes. These tomatoes are so sweet, you would think I added sugar, but I didn’t. Papa comes by on a wkly basis during the summer months and brings me tons of his tomatoes from his giardino/backyard. Every shape and size you can imagine. Even his delicious dark grapes from his very own vines that he planted over 45 yrs ago. I was only 12 yrs old when we moved there.🤷‍♀️👌😋👨‍🍳🇮🇹🍅
I used about 16-18 Romano tomatoes. You can add San Marzano and even Cherry tomatoes or mix all 3. The king of all cheeses…my very fav from when I was a little girl….

Here’s a set by step reel showing you how easy it is to make this amazing dish. If you want to, you can remove the peel (like I do most of the time). Just score the tops, Blanche them in boiling water for 1 min. Add them into ice water and peel the skin right off. Then cut them into pieces and make your sauce. You can even squeeze out some of the seeds.👩‍🍳

My Nonni lived  with us and my Nonna raised my sister and I in a small apartment above our store. We were 6 pple and we had to share one washroom until I was 12 yrs old. The good old days!! Miss my Nonni!! 🙏🤗♥️😉Even my robe is Italian.🤣My sis in law gave it to me when my family and I went to visit her in Puglia for Christmas and New Year’s in 2009/10.🇮🇹What a great trip that was. That was the last time my mil went back to Italy.🇮🇹😔

I am not a fan of mayo and I hardly use it so this is a much healthier, lighter way to enjoy your tuna. You can use either tuna in oil or in water. For this recipe I always like to use the tuna in water. Recipe below.⬇️

1 large can solid white albacore tuna 
3-4 large tablespoons of plain Greek yogurt 
Handful of fresh chopped dill 
Salt/Pepper to taste 
Enjoy with your fav bread. So amazing, you will love it.👌😋👩‍🍳
Note-Another way I love to eat tuna is by adding in a soft avocado. Just simply squish it in and enjoy with extra virgin olive oil, salt and pepper. So good.👌😋🥑

I brought one to my girlfriend’s house for our dinner party and I left one here for my family to enjoy. 
My obsession for amarena’s began in Sept of 2023, when my nephew bought me the best amarena ice cream in Rimini, Italy.👌🇮🇹😋
Well since I had some leftover amarena’s, I decided to add them into my tiramisu! They were a big hit!!👌Both my family and friends went crazy for this refreshing version of this iconic Italian dessert. 
I tempered my egg yolks like I did in my other tiramisu video with pistachios. I just feel like it’s peace of mind, to give your egg yolks a quick warm bath. It only takes 8 mins and I find the mixture so much more smoother and tastier.👩‍🍳👌You can skip this part if you like, but I recommend you don’t.

This was Breakfast with my Nonno Leonardo in the 7 This was Breakfast with my Nonno Leonardo in the 70’s and 80’s early 90’s. Pane, latte e caffe.☕️So delicious! Yup Italian little kids had coffee and sometimes a bit of wine and beer to taste during dinner. This was part of our culture, that kids got to experience a lot of things that many others didn’t. This is why I think children matured a lot faster in those days. If we were out with our parents and we were tired, we just snuggled and found a place to sleep on our cousins sofa or bed. No rules when it came to getting to bed early on a wkend. But they were strict in many other ways.🤷‍♀️The good old days.🤗
I grew up with 2 sets of parents under one roof. When I was little I thought everyone lived with their Nonni. But then I realized I was one of very few people that did. It was the most beautiful experience of my life and I was so greatful for this. 
I had 3 generations in one household. But my Nonni were so much older than my Mamma, so it felt like 4 generations bc of the huge gap. Nonna was 42 yrs old when Mamma was born. My Mamma was the last of 10 children to be born. Unfortunately out of Nonna’s 10 children, 5 only survived.🙏😔4 boys add a girl died.😔Back then they died of a very bad cold, flu, dehydration and lack of medication. Those were very sad times.🙏

This delicious creamy cheesy zucchini dish is so easy to make and comes together in no time, with just a few simply ingredients.😋👩‍🍳
This pasta was born in 1952 by a woman named Marie’s Grazia from the town of Nerano, in Italy off the Coast of Amalfi.🇮🇹The original cheese that was used for the this dish was “Provolone di Monaco” which can be substituted by a combination of Pecorino Romano and Parmigiano Reggiano Cheese. Although it’s creamy, there is no cream used in this recipe.👌👩‍🍳
I stayed true to the recipe and fried the zucchini, but you can even bake them if you really want to. But it’s not the same flavour of course.🤷‍♀️
You can make this as thick or as liquidy as you like. Just keep adding more pasta water until you get the constituency that you like. I added about 1 3/4 cup of pasta water, but I suggest you reserve about 2 cups, just in case you want to add a bit more. You may not need it all. 
Note-I suggest you do not add salt to pasta water & lightly salt zucchini at the end bc this dish is salty enough with all the cheese. @food52 @thefeedfeed

Sicilian Potato and Green Bean Summer Salad. So he Sicilian Potato and Green Bean Summer Salad. So healthy and delicious.👌😋🇮🇹👩‍🍳
As you can see I mixed the potatoes bc I didn’t have enough and that’s ok too. 
Ingredients 
1 lb baby Yukon gold potatoes
1 cup cherry tomatoes 
1/2 lb green beans (approx 3cups)
1/2 cup pitted green olives 
1/2 cup black pitted olives(optional)
1/2 small red onion, thinly sliced 
1/3 olive oil 
1/4 cup lemon juice from 1 lemon 
1 teaspoon of lemon zest 
1 teaspoon of Fresh or dry oregano from Sicily
Wash and boil potatoes in salted water until fork tender. (20 mins)
Drain and now add them to cold water. Peel and cut potatoes and set aside. 
Blanch green beans and add salt right at the end so they maintain their green colour. (2-3mins) You want them crisp and tender. Add them to cold water to stop the cooking. 
Add all ingredients into a mason jar and shake it up, add salt and pepper. 
Depending on the size of the potatoes, you may need to topup your dressing. 
In a large bowl add your cooked potatoes and beans and begin to dress the salad. Avoid stirring the salad, instead lift the bowl and shake it up so the potatoes don’t break.
You can make this salad the night better and refrigerate it. It comes even better.😋
This is a great salad to bring to the beach or enjoy as a side dish with your bbq. Buon Appetito! 👌🇮🇹👩‍🍳😋

They’ve been around for centuries and thanks to my cousin Santina and my sisters mil Cathy for sharing our family secret. These recipes are the same except my cousin makes them with ground almonds as seen in my video, Cathy makes them with almond flour as I shared another video a few wks ago using almond flour. There are so many versions of this one famous cookie and today I will show you one.👩‍🍳I have many more to share. They’re so easy and quick to make with just a few ingredients.👩‍🍳Secret ingredient here is….Almonds!

Very quick and easy to make and your family will love it.👩‍🍳Love the crunch on the outside and oh so soft and delicious on the inside.👌😋I remember my mil always making zucchini bread for my kids when they were little. It was their favouite thing. You can add chopped walnuts. Bake in the middle rack at 350 degrees F for 47-50 mins. Every oven is different so much sure to check it with a toothpick.👌👩‍🍳
Note-I lightly squeezed some liquid out of the zucchini, but not all. You want to leave some to keep it moist. I used a 
91/2 by 51/2 inch loaf pan.
