It was a beautiful for my kids to  experience all of this when we were in Puglia, Italy in 2009 for Christmas. We also spent New Years and La Befana there too. I even got a stocking too from my sweet Befana.🤣🥳🎉🇮🇹🎄

Lamb Speducci cooked on the stovetop in my new pan Lamb Speducci cooked on the stovetop in my new pan. You can get it on my website LaFocacciaQueen.com. If you want your lamb to remain juicy, I find this is the best way to cook lamb. It remains soft, juicy and so flavourful. Comes together in just few minutes. 
Keep turning it over on med/high heat. I made 2  batches of 10 as you can see here in the video. I forgot to add garlic in the first batch. Make sure to add your garlic cloves. The combination of the garlic, rosemary and wine is just magical. It adds such an amazing flavour and sweetness to the lamb. When I’m not bbq’ing, I also love to cook my lamb chops this way. Stovetop Lamb Speducci 

10 lamb speducci 
Fresh rosemary sprigs
2 tablespoons extra virgin olive oil 
3 garlic cloves, cut in half 
Splash of white wine 
Salt/pepper to taste
Note- I ended up making 2 batches of 10 speducci. 
Method
Heat a large nonstick grill pan over med/high. Add garlic cloves, speducci, olive oil, and fresh rosemary. Keep turning on every side once, then add a splash of wine. Turning again until lightly golden and juicy. Depending on how cooked you want them, they should be ready in 5 mins. If you want them a bit more golden, cook for another 2 mins. Do not over cook. They are so delicious and juicy. Make some flat green beans/baked potatoes and a salad and you have a delicious dinner.

This video is dedicated to my mother in law and all her 9 siblings who have passed on.🙏Every Christmas we would smell these amazing cookies in each of their homes. I actually got teary eyed making these. So many beautiful memories with these cookies and many more. Castagnelle are a Pugliese Christmas tradition made throughout the month of Dec. They’re crunchy on the outside and soft and nutty on the inside. Just amazing!! Thank you to my cousin Dorothy for helping me convert all the measurements and  bring this recipe back to life. Our Mil’s were sisters & this is exactly how they did it!!👩‍🍳👩‍🍳
I found that they all use to overcook them and make them too crunchy. I bake them a little less.👩‍🍳
My husband is so happy that I am carrying on his Mamma’s Christmas traditions.🤗♥️
Now I will share the recipe and my wish is that hopefully the next generation after me will also take over and continue these beautiful Italian Tradition’s.🙏👩‍🍳🤗

You need to try my brother in law Vito’s delicious shrimp bursting with flavour.🍤👌😋Secret ingredient is the Grand Marnier liquour. What can I say, we Italians love to add liquor in a lot of our dishes. Don’t worry the alcohol will evaporate and I promise, you won’t get tipsy.🙏👌
You can also bake them in the oven for 20 mins at 400 F. Bbq them on the grill for 2-3 mins on each side. Add them on skewers, turning once until they turn light orange in colour.🍤
(Marinate & refrigerate for a few hrs).

Note****Make sure not to over cook them. The top of the cookie will always remain white,  it doesn’t mean they’re not cooked. As soon as the bottom of the cookie is lightly golden, remove them quickly bc they’re ready. This is the secret of how you’re going to achieve that pillowy soft cookie.👌👩‍🍳

12 grandchildren and 5 great-grandchildren (2 are twin boys).🙏What a beautiful family her and Zio Luigi have created.🙏❤️
She had a larger than life personality!🤩She was so caring, loving and the most generous human being you could ever meet. She was actually my husband’s Zia, but I met her when I was only 17yrs old. We hung out on a weekly basis at my mil’s house. We played cards, we baked cookies, made focaccia’s. We always had so many laughs when we were together.🤣🥳
First thing Zia Rosa asked me when I met her in 1984 was….Do you know I dieci Comandamenti? Do you know the Ten Comandments? I think I know most of them Zia, why!!! She said, No you don’t!! 
I have to teach you them before you get married. If you don’t know them, then you’re not ready for marriage. Oh geez, ok Zia. What are you?? 
1. Go to school 
2. Get a job 
3. Make money (save money)
4. Learn how to cook 
5. Keep your nails short so you can do the dishes
6. Learn how to clean the toilets

Lentil Soup at New Year’s Eve has been an Italian Lentil Soup at New Year’s Eve has been an Italian tradition at my mil’s house since I was a teenager. ❤️🇮🇹👩‍🍳We have these on New Years Eve bc their coin like shape signifies health, wealth and prosperity. Buona fortuna/Good fortune for the entire year.🙏❤️
This dish reminds me of my childhood. It’s home, it’s comfort, it’s one of the most iconic authentic Nonna dishes. Nonna use to make this dish for me on repeat. We ate it as a soup more liquidy, or a bit thicker with pasta (d’adini), rice or on its own. It’s quick, inexpensive & a no brainer. I’ve made many videos of this dish on my page bc that’s how much I love it.❤️Lentil is a great source of iron, which I’ve always been low on in the past. I love the fact that you don’t have to soak them overnight. Just lay them flat on a dish & go through them to make sure there aren’t any tiny little stones. You may find 1 or 2, just remove them & give the lentil a quick rinse. Since it’s such a healthy dish, I usually make lentil all year round. I made sure to introduce this to my children at a very young age, just like Nonna did for me. This recipe was actually my mother in laws. When I was a teenager, she taught me how to make it her way. She never sautéd her veggies. She just added them raw right into her pot of water. I usually do it that way too. But sometimes I like to change things up. People ask me, but where are the onions?? One rule Nonna Lucrezia had #was…..Absolutely No Onions go into her lentil!!!🤷‍♀️Only whole garlic cloves. If the garlic was huge then you cut it in half. As you can see in my video, I added: 
3 tablespoons extra virgin olive oil, 2 carrots, 2 celery stalks with the soft leaves, 3 garlic cloves, 3 Romano tomatoes chopped(frozen from my garden), handful of thinly chopped parsley, 3 bay leaves, one tablespoon organic soft veggie bouillon, salt, pepper, 400g dry lentil (2 cups), approx 3 liters of water. Cook for 45mins to 1 hrCooked basmati rice separately. Serve, drizzle some very good extra virgin olive oil on top & freshly ground cracked pepper.

We served it on both Christmas Eve and Christmas Day and barely made a dent! We even had a separate platter of strawberries, blueberries, and melon that never made it out. This is where my inspiration for presentation comes from.👨‍🍳👌🇮🇹
Growing up in a supermarket, I remember how he always made everything look beautiful….perfectly stocked shelves, spotless, and organized.
At 85, he’s still the same: picture perfect 🙏❤️
Anyone that knows my Papa  knows that this is his thing! Every Sunday he always prepares the most amazing fruit platters. Depending on the season, you will always see a variety of colourful sweet delicious yummy fruit.👨‍🍳🍒🍓🍇🍎🍉🍑🍊🍍🍏🍐🥝🥭🥥🍈

When a Sicilian girl perfects an Iconic Barese Christmas Cookie from her husband’s Region of Puglia…..it’s a reason to celebrate.🥂🥳👌👩‍🍳🙏🇮🇹Although I’ve been making these with my mil since I was a teenager. I have tweaked the recipe bc her and sisters would make them too hard. I did post her recipe last year. But this one is absolutely amazing!👌👩‍🍳😋Try them out and I promise you they will be one of your favourite Christmas Biscotti ever.👩‍🍳😋I used regular coffee in my dough mixture, but you can use espresso or sub with water. I used OO flour, but they may still turn out with all purpose flour.🤷‍♀️Bake at 355 degrees F for 12-15 mins. Mine were ready in 16 mins bc I made them a bit bigger. You will get 24-28 cookies depending on how thick you make them.

This was my Nonna Concetta’s authentic recipe that she use to make as a little girl back in Sicily 🇮🇹 with her Mamma and Nonna. Now today here I am showing you how her daughter, (my Zia Maria)still continues to honour her Mamma’s cookies.🙏❤️ Zia Maria and Zia Nina are both my mom’s sisters and many years ago they decided to tweak this recipe and add shortening instead of oil but you can use neutral oil instead. 👌They might not come out as soft though. You can make them any shape you like, either round or oval, even the shape of an S cookie. The shape of a twist is just how they made them back home in Sicily.🇮🇹They’re soft, delicious and just the right amount of lemon both inside the cookie, as well as in the icing.🍋 Btw I didn’t say in the video how much flour we added bc she kept adding to the bowl but in the end it was 4 1/4 cup. Fried Calamari are a big hit at my house.👌😋👩‍🍳🇮🇹Try these as part of your Christmas meal. I always serve them as an appetizer with some freshly squeezed lemon juice, alongside my fresh Canadian Oysters. Thanks to my son for always stepping in to help with the calamari. 
Make sure to let them sit in milk for at least one hour so they tenderized and also get rid of any fishy smell. Recipe below and also in my comments. 

Fried Calamari 

8 strips of squid with tentacles attached (curly part), cut squid in thin rings
1 1/2-2 cups milk (soak, cover and refrigerate fish for one hour)
2 cups flour 
1/2 cup cornstarch 
2 tablespoons garlic powder 
1-2 tablespoons cayenne pepper 
Salt and pepper to taste 
Extra Virgin Olive oil or neutral oil for frying. (Approx 2 inches high)
Once calamari have been marinating for 1 hr, remove calamari. Lightly drain and shake off the milk, adding them directly into the seasoned flour. Coat them evenly and have a deep pan ready with oil heating. Once oil is ready and hot, work in batches and add your calamari a bit at a time. 
Fry until they’re golden brown on each side, approx a few mins on each side. 
Remove and add them onto a paper towel to absorb the oil. 
Enjoy! So crispy and delicious.👌😋👩‍🍳🇮🇹

Note-Mussels/Clams should be tightly closed and free from cracks. If the shell is a bit open, tap it on the counter and it should close. If it doesn’t, throw it away bc it might be spoiled. 
You can remove the garlic once it’s sautéed, or just leave it in.

They’ve been around for centuries and thanks to my cousin Santina and my sisters mil Cathy for sharing our family secret. These recipes are the same except my cousin makes them with ground almonds as seen in my video, Cathy makes them with almond flour as I shared another video a few wks ago using almond flour. There are so many versions of this one famous cookie and today I will show you one.👩‍🍳I have many more to share. They’re so easy and quick to make with just a few ingredients.👩‍🍳Secret ingredient here is….Almonds!

Note-I made half the recipe, approx 32-35 cookies depending on how big you make them. I forgot to show me adding the baking powder. Just add a pinch to the dry ingredients. (Optional)

I want to teach and preserve these beautiful languages so that you can one day learn how to speak them and pass them on to your children. Our Italian culture/heritage is not just about the food and cookies.🇮🇹👩‍🍳The language is a huge part of who we are. I learned how to speak Sicilian before I even knew English. This is how it was back in the day in the 60’s and being first generation born in Canada. Our first language was Italian bc my Nonni lived with us and they couldn’t speak English. My dad couldn’t either. My mom learned English at an early age, but we hardly saw my parents bc they had a supermarket to run day and night. You’re probably wondering…how does a Sicilian know how to speak Barese. Everyday I would listen to my mil and her family and I learned on my own. 🇮🇹
My cousin Santina and I made 2 of our family favourite Barese Christmas Cookies that both her mom and my mother in law made since they were young kids. It’s one recipe, same dough, yet we created 2 different amazing cookies. Cartellate E Calzoncelli filled with sweet ricotta and Vin Cotto/or fig juice poured on top. I’ve been eating these since I was a teenager. They are so delicious and bursting with flavour. Both are topped with this delicious fig juice mixed with a bit of honey/white wine  that’s so rich in flavour and just the right amount of sweetness. Thank you Santina for spending the day here in my kitchen with my family creating beautiful memories on the eve of my mother in laws birthday. I’m sure she (along with your Mamma) were both looking down on us so proud of what we’ve created.🙏♥️🇮🇹👩‍🍳
