Ciambella Di Mele Apple Cake

It’s so tasty and soft in the inside and topped with crispy apples. So yummy, you’re going to love it.

Materials

Cake Batter

  • 4 large eggs
  • 1 ½ cup granulated sugar or less if preferred 
  • 1 cup extra virgin olive oil or neutral oil
  • 3 cups all purpose flour, sifted
  • 2 tsp baking powder
  • tsp vanilla extract
  • ½ cup freshly squeezed orange juice
  • ½ tsp Powdered sugar for dusting

Apples and Filling

  • 2 large or 4 small honey crisp apples, peeled and cored
  • 4-5 tbsp granulated sugar
  • 4-5 tbsp brown sugar
  • 2 tsp cinnamon

Instructions

  • Preheat oven to 350 degree F. Grease a tube cake pan with butter and an evenly light dust of flour all around. 
  • In a large bowl add sifted flour, baking powder and with a whisk or fork mix together and set aside.
  • In a medium bowl add eggs and beat with an electric mixer as you slowly add in your sugar. Add in oil, vanilla and mix until smooth.
  • With a wooden spoon and spatula, slowing add your wet egg mixture into your flour mixture.
  • Also adding in 1/2 cup orange juice and keep stirring with a wooden spoon until all flour is incorporated and you have a smooth batter.
  • Cut and core 1 apple into thin slices, set aside.
  • Pour half the batter into your greased cake pan. Add your sliced apples evenly all around into your batter on a diagonal, pressing them down a bit. Evenly sprinkle apples with half the sugar mixture.
  • Cut and core your second apple into thin slices. I added them into my bowl with the remaining sugar mixture. Coat them evenly and set aside.
  • Now for the second layer,  add remaining batter into your pan and top with your sugar coated apples. Add them evenly over the batter on a diagonal and press them down a bit.
  • Add cake in your pre- heated oven of 350 degrees F, in the middle  rack. Bake for approx 55-60 mins, depending on your oven. For the last 15 mins, I lowered the cake to the 2nd last rack.
  • My oven is very strong, so I baked it for 55 mins.
  • Let it cool for 15 mins in your pan before flipping it over. You can top with powdered sugar before serving. 

Notes

Note**The cake will be a bit sticky around your pan bc of the juices from the apples/sugar. To prevent cake from sticky to your pan, lightly go around with a knife to make sure it’s not stuck anywhere. Do the middle part as well.
